Ube & Coconut Jelly

๐˜œ๐˜ฃ๐˜ฆ ๐˜ญ๐˜ข๐˜บ๐˜ฆ๐˜ณ

๐Ÿ”ธ 1 cup Grated Purple Yam (bought frozen)

๐Ÿ”ธ 1 cup + 1 cup Water

๐Ÿ”ธ 1/8 tsp Ube Paste

๐Ÿ”ธ 1/2 cup Sugar

๐Ÿ”ธ 1 tsp Agar Agar Powder


๐˜Š๐˜ฐ๐˜ค๐˜ฐ๐˜ฏ๐˜ถ๐˜ต ๐˜ญ๐˜ข๐˜บ๐˜ฆ๐˜ณ

๐Ÿ”น 1 cup Coconut Milk

๐Ÿ”น 1 ยผ cup Water

๐Ÿ”น 1/4 cup Sugar

๐Ÿ”น 1/4 tsp Salt

๐Ÿ”น 1 tsp Agar Agar Powder


๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€:

1. In a blender, blend 1 cup Grated Purple Yam with 1 cup Water. Pour it through a sieve to separate the Purple Yam from the pulp. Use a spoon and press on the pulp to release more juice. Discard pulp and set juice aside.


2. In a small sauce pan, boil 1 cup Water. Add 1 tsp Agar Agar Powder and whisk until itโ€™s fully dissolved. Add 1/2 cup Sugar and continue to whisk until it dissolves. Pour in the Purple Yam Juice and add 1/8 tsp Ube Paste or 2-3 drops. Mix well and turn the heat off. Evenly pour it into small cups or containers. Remove the bubbles. Let it fully set before making the coconut layer. To speed up the process, let it cool in the fridge until it hardens.


3. In a small sauce pan, boil 1 ยผ cup Water. Add 1 tsp Agar Agar Powder and whisk until itโ€™s fully dissolved. Add 1/4 cup Sugar and continue to whisk until itโ€™s also fully dissolved. Pour in 1 cup Coconut Milk and add 1/4 tsp Salt. Mix well and turn the heat off. Carefully spoon it on top of the Ube layer. Remove the bubbles.


4. Place it in the fridge for at least 2-3 hours before eating!
