Stir Fry Bitter Melon & Eggs

โšก๏ธ 200g Bitter Melon

โšก๏ธ 1 Tbsp minced Garlic

โšก๏ธ 2 Tbsp Oil

โšก๏ธ 1 Tbsp Oyster Sauce

โšก๏ธ 1โ„2 tsp Fish Sauce

โšก๏ธ 1โ„2 tsp Mushroom Seasoning

โšก๏ธ 1โ„2 tsp Sugar

โšก๏ธ 2 Tbsp Water

โšก๏ธ 1 tsp Salt

โšก๏ธ 2 eggs


๐—œ๐—ป๐˜€๐˜๐—ฟ๐˜‚๐—ฐ๐˜๐—ถ๐—ผ๐—ป๐˜€:

1. Cut 200g Bitter Melon in half lengthwise. Remove the inside and cut into thin pieces. Soak it in water with 1 tsp Salt for 10 minutes. Drain and wash.


2. In a pan, on medium high heat add 2 Tbsp Oil and fry 1 Tbsp minced Garlic until fragrant.


3. Add in the Bitter Melon and cook for about 2 minutes.


4. Move the Bitter Melon to one side, crack in 2 eggs. Let it sit for 10-20 seconds and scramble everything together.


5. Add 1 Tbsp Oyster Sauce, 2 Tbsp Water, 1โ„2 tsp Sugar, 1โ„2 tsp Mushroom Seasoning, and 1โ„2 tsp Fish Sauce. Stir fry for 1-2 minutes. Turn off heat and transfer to a plate.
